Dahi Puri Recipe

What is so good about dahi puri?

Now, we are compelling you to make dahi puri at home, there must be a reason behind why it is considered a great crowd-pleasing dish, isn't it? Making dahi batata puri or sev puri is somewhat like the same thing. Both are very popular in Mumbai and you will often find the locals queued in front the the thele or the stall munching on the platter of crunchy and lip-smacking puri. They are even called batata puri where batata is a Marathi word that means potatoes.

Puris are round and puffy crispy shells that are fried to make a light and flaky crust. The center is hollow and it is filled with spicy red chutney, green mint chutney, and sweet tamarind chutney to make this turn out saucy and rich. The speciality of dahi puri is the cold whisked curd which is served on top. Once you have added a layer of curd, next go in the spices like roasted cumin powder, black salt, chaat masala, chili powder, and so on.

It is best to have dahi puri made right before you serve it to the guests! Keeping the puri for too long will turn it soggy and wet. There are several variations of dahi puri that you will come across in different regions of the country. Feel free to add black peas or chickpeas to make the puris healthier and filling. Packed with steam sprouts, moong beans, chopped onions, and tomatoes, this recipe just gets better.

If you wish to save time on the day when you have guests in the house then go ahead and prepare the chutneys the day before. Further, you can buy the puris from the store instead of frying them in the house which will again save you some more time.

What are the chutneys you will need for dahi puris?

Well, there are three main chutneys that you should always have ready whenever any chaat is coming up.

  • Green chutney- The basic composition of green chutney includes mint and coriander leaves blended along with chili paste and several other spices and seasonings.
  • Red chutney- The red chutney is prepared with red chilis roasted and blended to create a spicy essence.
  • The sweet tamarind chutney- The sweet and cosy tamarind chutney of course consists of tamarind, dates, and so on.

Basic steps and tips to make dahi puri

Now let's get down to making dahi puri at home! Here are a couple of tips and steps that can help you to accomplish the chaat in no time.

Begin with boiling the potatoes along with the sprouts. Once boiling is done, slice the potatoes into small sections and pour inside every puri that is punctured at the top. Make sure you chop the tomatoes, onions, and coriander beforehand. It gets easier when you have prepared most of the things the day before so that when you are making the chaat, all you need to do is assemble them.

Use a spoon or cake whisk to whisk the dahi at first. This will help you to get a smooth and creamy texture. Since you are using sour curd, do not add sugar since the tamarind paste is already sweet and you don't want your chaat puris to turn out as cupcakes.

On each plate, you can assemble seven to eight puris first and then puncture from the top. Now fill the center with chopped potatoes, onions, and tomatoes in the first layer. Sprinkle some chaat masala, cumin powder, and black salt in it. Next, you can put all three chutneys into the puris. Add curd from the but not too much as this can turn the puris soggy after a short while. Again put some seasonings like chaat masala, cumin powder, etc, and then garnish with a lot of sev.

Finally goes the chopped corianders and you are done. A delectable and crunchy platter of dahi puri is ready to go. If you wish to make it healthy then don't forget to add some sprouts and boiled chickpeas as well. And with that, we are done! Tell us how it was!
