Dahi Bhalla is a term that is used in Northern states of India while dahi vada is a term that you will commonly hear in Southern states. What are the common ingredients you need for making vada
To make the vada, you will need a fine lentil paste of Urad Dal (Split Skinned Black Gram Lentils), and Moong Dal (Split Yellow Moong Lentils).
You can wash and rinse the lentils first followed by soaking them in water overnight! This will tenderize the pulses before you make the paste. However, if you are running short of time then you can soak for four hours. Maybe, try and soak the pulses in the afternoon and prepare the vada in the evening. This way the lentils will remain submerged in water for nearly about four hours. While you are making the paste, add a pinch of chili pepper and salt.
The lentil batter must be whisked continuously so that no lumps are formed in it. Stirring the batter continuously will create pores for air to enter and turn it fluffy and light.
But how do you find out whether the batter is ready to fry? Well, all you need to do is drop a small ball of batter into a bowl and water. If the ball floats, the batter is ready and if not, you need to whisk more and better. You can add a small hint of baking soda to create a better consistency.
