In this section, we are going to help you make some wonderful poori paratha at home but before that, if you end up with the trouble of stuffing spilling out, go through the tips first.
A glimpse into the world of stuffed paratha
If you are fond of stuffed flatbread like naan and kulcha then here is an addition to the list! Stuffed paratha is equally good and in terms of filling, you can get quite versatile with the types to opt for! It is a North Indian delicacy that is suitable for breakfast, lunch, dinner, or simply anytime you are craving something delicious and flavorful!
Usually, a poori paratha is served with raita or chutney. One can even enjoy it with chicken curry, daal, pickle, or anything that they want. However, at the end of it all, there is one thing that can still come as a hurdle on your path to enjoying the perfect stuffed paratha! Yup, we are talking about stuffing which often spills out white cooking or flattening the dough balls! Is there a way to manage and troubleshoot the situation?
Of course! Not one but many! So let's find out!
1. Kneading of a soft dough
Often we are confused about the kind of dough that one is supposed to make when it comes to kneading the same. Well, with stuffed paratha, you are expected to go ahead with a texture that is not too hard otherwise the chances are you will end up breaking the exterior and spilling the stuffing while either flattening the balls or while cooking.
Add a small amount of ghee or butter while kneading to ensure the texture is desirable. Regular watering is essential so that you do not end up with a rough and dry consistency for the same. You may not get it right in the first attempt because expertise comes with experience and experimentation. Eventually, over time, you will know the level of softness that you are looking for!
2. Allowing the rest for a while
Yup, that is right! You should not immediately start filling with the stuffing and making the paratha immediately after kneading. So, keep some time in hand before you begin. Maybe, if you are preparing this batch of poori paratha for dinner then knead the dough in the morning and keep it away. Still, if you are doing the job in the evening, set aside the dough for at least half an hour.
During the period of rest, the gluten in the dough is allowed to develop and create bonding with other components for the desired texture. This will considerably reduce the chance of tearing while you roll the parathas. You can even allow the paratha to rest after stuffing as well! The impact is the same.
3. Do not overdo the potato stuffing
This tip applies to potato stuffed paratha or aloo paratha! When you are looking forward to a juicy and tender aloo paratha the first thing that you should be careful about is not to overcook the potato stuffing. Often we use cold water to cool down the boiled potatoes when time is a constraint but never do that when it comes to potato stuffing for aloo paratha.
Too much moisture in the potatoes can turn them soggy and while you roll the paratha, it can eventually break open. Peel the potatoes once they are completely cool and we prefer to mash and grate them to avoid any kind of lumps.
4. Note the temperature of the paratha stuffing
If you are using gobi( cabbage) or peas for paratha then make sure that the veggies are at the ideal temperature to be stuffed into the paratha dough ball. Room temperature is what you should opt for! Neither too hot nor too cold, as cold stuffing can leach water and got stuffing can trap air which will break open the dough cover while rolling or cooking.
5. Never make the mistake of over-stuffing the parathas
Often we feel that more stuffing means a tastier paratha but that is certainly not so. Too much stuffing into the dough ball can make it hard for the pin to roll over the ball and in turn, force the stuffing to spill out. Use gentle pressure while you roll the parathas!
Following these tips will ensure you have the perfect poori paratha on the tawa.
