Being super healthy, packed with nutrients, and also gluten-free, we can promise you that you will fall for this recipe in a single bite. A rich culinary tradition, this is a unique recipe that is a heritage of Gujarat.
We are all aware of Dhokla because at some point either we ended up making it at home or we bought it from the store and binged on it. The cushiony texture, the spongy consistency, and the delicious taste, many wow factors attract us to this recipe. White rice or idli rava is going to be used for this recipe while you can add some off-white urad dal to make the color stand out. Not to forget sour curd since this recipe is pf khatta or sour dhokla.
You may use green chilis and ginger to flavor the batter of khatta dhokla, where the former is added based on one's spice tolerance level. Once it is ready, the dhoklas are cut into desired shapes and you can serve them fresh with delectable chatpata chutney on the table. Perhaps, the time has come for you to indulge in homemade dhokla. We will share some tips with you on this.
Let us tell you that if you are opting for white dhokla which is the fermented version of the popular snack, you need to have 6 to 7 hours in hand. That's how long the preparations take. So be patient and follow the steps carefully. However, once fermentation is done, the steaming process only takes about 15 to 20 minutes. Not that you have to do too much with this dish, it's just the time duration that you need to be concerned about.
Making the batter_ A gluten-free snack from Mumbai and Gujarat
We will start with mixing the ingredients for the batter. You need to soak the regular white rice with urad dal for at least 4 hours. Drain the water after that as you observe the seed coat of the lentils has softened.
We take a grinder and blend the rice and the soaked lentils with ginger and chopped chilis. Add some water so that the mixture is not very grainy. To do this, you need to pour some curd as well. This is the batter which is left to ferment for at least 6 to 7 hours or overnight. Hence you can understand that this is a make-ahead recipe, not something that you prepare instantly.
After fermenting, add a little oil and baking soda before you send off the batter for steaming in the pressure cooker. Sprinkle some black pepper, chili powder, and sesame seeds on top for garnishing. Steaming takes about twenty minutes after which you can top the dhokla with tempered spices and your hearty treat is ready.
